Apple crisp is one of those all time favorite desserts that just about everyone loves. But so is cake. So, I decided why not take 2 classics, combine them together, and see what happens. This apple crisp cake was the result. I served it at a family gathering and it was gone before the night's end. Eat it plain or serve it up with a spoonful of whip cream!

Apple Crisp Cake
Ingredients:
3/4 cup brown rice flour
1/2 cup tapioca starch
1/4 cup chickpea flour
3 tsp xanthan gum
1/2 tsp salt
2 tsp baking powder
2 tsp cinnamon
1/4 cup margarine
3/4 cup brown sugar
1/4 cup white sugar
1 egg
1/2 cup milk
2 apples, peeled and chopped
2 TBSP margarine
1 cup quick oats
1/2 cup brown sugar
1 tsp cinnamon
Directions:
Preheat oven to 400 degrees. Whisk together 3/4 cup brown rice flour, 1/2 cup tapioca starch, 1/4 cup chickpea flour, 3 tsp xanthan gum, 1/2 tsp salt, 2 tsp baking powder, 2 tsp cinnamon. In a separate bowl cream together 1/4 cup margarine, 3/4 cup brown sugar, and 1/4 cup white sugar. Beat in 1 egg and 1/2 cup milk. Add wet ingredients to dry ingredients. Stir well. Fold in 2 apples that have been peeled, cored and chopped into tiny pieces. Pour mixture into a greased 8x8 pan. Next, mix together 2 TBSP margarine, 1 cup quick oats, 1/2 cup brown sugar, 1 tsp cinnamon. Sprinkle over the top of the cake. Bake for 40 minutes.
