I love this recipe because it makes only one serving. It makes a pizza that is roughly the size of the frozen mini pizzas you find at the grocery store, so it is great for children or anyone practicing portion control. Although it is quick to throw together, you can make the process even faster by premixing all of the dry ingredients together and storing them in little zip-lock baggies .

Pizza Crust For One
Ingredients:
2 TBSP brown rice flour
2 TBSP tapioca starch
2 tsp chickpea flour (garbanzo bean)
1/4 tsp salt
1/4 tsp quick rise yeast
1/2 tsp sugar
1/4 tsp xanthan gum
1/2 tsp olive oil
1/4 cup warm water
Directions:
Preheat the oven to 400 degrees. Add all ingredients, except water and olive oil, to a bowl and stir. Now, add the water and olive oil and mix. The dougn will be soft and sticky. Place dough on a parchment paper lined pan or on a pan that has been rubbed with oiive oil. Place a piece of siran wrap on the dough, and press the dough with your hands until you have made a flat round crust that is approximately 1/4cm thick. Gently remove the siran wrap and add your favorite toppings. Bake for 15 minutes.
