These energy bites are a great on the go snack. Made with sunflower seed butter, they are a great addition to your children's lunch box! If you want to add more kid appeal, use chocolate chips instead of cranberries. Also, be sure to use oats that are certified gluten free. Some good choices are Quaker Gluten Free Oats, Bob's Red Mill, or Only Oats.
Chocolate Cranberry Energy Bites
Ingredients:
1 cup gluten free quick quick oats
1/2 cup shredded coconut, sweetened
1/2 cup dried cranberries, sweetened
2 TBSP cocoa powder
1/2 cup sunflower seed butter (or peanut butter)
1/3 cup honey
1/4 cup powdered sugar (optional)
Directions:
1. In a medium size bowl, stir together the sunflower seed butter, honey and cocoa powder.
2. Stir in the oats and coconut until well combined.
3. Fold in the cranberries.
4. Shape the mixture into 12 balls
5. Roll the balls in powdered sugar if you desire a sweeter energy bite
