Mango Salsa is one of my favorite salsas to make. Super fresh and juicy, sweet with some heat, and very versatile in its uses. Serve it as is with some tortilla chips on the side for use as an appetizer. Serve it on top of chicken or fish to add a nice twist to your main dish. Add it to salad - black bean and mango salsa accompany each other very well. Also, a great accompaniment to beef. It's uses are endless. Mango Salsa
Ingredients:
1 mango, peeled and chopped
1 red pepper, chopped (seeds removed)
1 bunch green onions, chopped
4 pieces of sliced pickled jalapeno, minced finely
1 TBSP olive oil
1/2 tsp salt
1/4 tsp pepper
1 tsp ground cumin
1 tsp mild chili powder
juice of 1 lime
Directions:
Place all ingredients in a bowl. Mix well. Refrigerate for 2 hours before serving.
