(I uRed Lentil and Vegetable Soup
Serves 4
Ingredients:
1 TBSP olive oil
2 onions, chopped
3 cloves garlic, minced
2 carrots, peeled and chopped
1 sweet potato, peeled and chopped
2 cups spinach, chopped
1 tsp curry powder
1 tsp salt
½ tsp pepper
3/4 cups water
½ cup red lentils, rinsed
2 cups water
1 cup milk (I used 2%)
Directions:
1. Heat the olive oil in a medium size pot.
2. Add the onion, and cook for 3 min
3. Add the garlic, and cook for another minute or so.
4. Add carrots, sweet potato, spinach, curry powder, salt, and pepper. Mix well and bring water to a boil. Once the water is boiling, reduce the heat, put lid on pot, and simmer for 10 minutes.
5. At this point, the water should be almost boiled down. Add the red lentils, and remaining 2 cups of water. Stir well. Bring the water back up to a boil. Once it's boiling, reduce the heat again and simmer for 15 minutes, stirring occasionally.
6. Remove lid and stir in the milk. Cook for an additional 3 minutes.
7. Serve, and enjoy!
