Red Lentil Loaf
Ingredients:
1 1/2 cup red lentils, rinsed
1 TBSP olive oil
1 onion, chopped
1 clove garlic, minced
2 jalapeno peppers, seeded and finely chopped
1 sweet potato
2 cups spinach, chopped
1/4 cup tamari sauce
1 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
2 cups oatmeal
Direction:
Put lentils in a pot of boiling water. Reduce heat and simmer for 10 minutes until tender. Pour into a colander to drain remaining water.
Place sweet potato on a microwave safe plate. Heat for 5 minutes, then set aside until slightly cool. Once cool, peel skin off and chop into small pieces.
Heat olive oil over medium heat in a frying pan. Add onion, garlic, and jalapeno peppers. Saute until tender, about 5 minutes. Add the cumin, salt, and pepper. Mix well. Then add spinach, cooking until wilted. Next, add the tamari sauce, sweet potato, red lentils and oatmeal. Mash everything together until well combined. Pour into a loaf pan, spreading mixture evenly into pan. Bake for 25 minutes in a 350 degree oven.
