Slow Cooker Sweet Potato and Chickpea Curry
Ingredients:
1 TBSP Coconut Oil
1 onion, roughly chopped
2 garlic cloves, minced
1 inch piece of fresh ginger, finely chopped
1 sweet potato, chopped into bite sized pieces
1/4 tsp salt
2 tsp curry powder
1 398ml can tomato sauce
1 can chickpeas
Directions:
Place all ingredients in a slow cooker (except chickpeas), and mix well. Turn slow cooker on medium heat and cover. Slow cook for 3 1/2 hours. Drain chickpeas and rinse. Add to slow cooker, cooking for an additional 1/2 hour. Serve over rice. We like to use the rice in the recipe listed below!
Vegetable Fried Rice
Ingredients:
1 cup jasmine rice
1 tsp olive oil
2 eggs
1/2 cup frozen corn
1/4 cup frozen peas
3 TBSP tamari sauce
Directions:
Cook rice according to instructions listed on package. When rice is just about done, heat olive oil in a frying pan. Add eggs and scramble. When eggs are cooked, add corn, peas, tamari sauce and cooked rice. Stir well. You can adjust the flavor of the rice by adding more or less tamari sauce to suit your personal tastes.
